Potato and artichokes stew
1 kg. of potatoes, 6 artichokes, onion, 500 gr. of tomatoes, oil, origan, salt, pepper.
Peel, wash and cut the potatoes in cubes. Strip the artichokes from the outer leaves and cut the tender part in slices. Mix all the ingredients in a pot, adding onion, tomatoes in pieces, oil, salt, pepper, origan and the needed water (the soup shall not be thin). Cook over a very gentle heat for one hour. Serve hot.
